I miss you Bakers!

It's true I have not posted in about 5 weeks. The pastry case at work is consuming me.

This is a testament that if you build it - they will come. It is better to have an empty case at the end of the day - rather then a full one but there are some days I am prepping and baking 11 hours a day. Croissants and Danish are my biggest sellers -with anything I make from puff pastry running a close second. Laminates are in.

Macarons are also selling at a fast clip and it's Valentine's week. Tuesday is the big day. This is the biggest day of the year for pastry chefs and bakers - the spotlight is on us.. 

And I am buried in macarons. I have piped a thousand plus this week...pistachio, rose petal, chocolate, vanilla and raspberry....

Above is a clip of me on Friday. I am at the 500 macaron piped mark here.

I hope you have a Happy Valentine's day and that you have a chance to enjoy making the treats you are no doubt creating for your SOs or maybe you are your own Valentine this year - that's ok too.
