Hi Collette, I bought your online course at Craftsy, watched several times, printed out the materials, and the course was amazing. Honestly, I've got much more than expected in the beginning. A lot of tips, tricks and basic approaches. So, thank you so much for that.Is it possible to make another course on crispy dough? I mean Pate brisee for tarts and quiches? I often cook quiches, end every time the crust differs, so, I'm unable to identify what I'm doing wrong. Sometimes dough does literally melting in the oven, and I use fork in order to spread the dough back to the walls of the pan (that's crazy), sometimes its being squeesed, and the crust becomes much smaller than the baking pan? again dont know why...So, I'm pretty sure that a lot of people need your experience and instructor skills in order to cook delicious homemeade tarts and kuiches
